Local Specialties : Heshiko & Echizen Gani Fukui is famous for two unique tastes:

Heshiko Sushi
Mackerel aged in rice bran. This traditional method creates a deep, salty "umami" flavor. It is a true taste of Japanese wisdom.
The Kono district sits along the beautiful Sea of Japan. Historically, it was an important port for ships traveling across the sea. In this area, "Heshiko Sushi" has been loved for generations as a special meal to celebrate the autumn harvest. Today, only a few people know the traditional way to make it, making it a very rare and precious dish. -
Echizen Gani (Snow Crab)
Known as the "King of Winter," this is Japan's top crab brand. It is so high in quality that it is even presented to the Imperial Family.
The secret to the deliciousness of Echizen Gani is the location. The fishing grounds are very close to the port. Small boats can catch the crabs and bring them back quickly.
This means you can enjoy the freshest crab possible, right here in Fukui.
Beside these, you can also enjoy Echizen Soba (buckwheat noodles) and Mizu-yokan (sweet red bean jelly), which is a favorite local treat during the snowy winter.
